The life of the famous Kilnsey trout begins at the Sikes Beck spring, where a million gallons of water gushes from the hillside.

kilnsey_181The Kilnsey Estate has a long tradition of fish farming. The monks of Fountains Abbey bred carp here in the 1200s. Kilnsey Park has been a working trout farm since 1978, and today you can see how the incredibly pure spring water is used to rear the finest rainbow trout.

We still process our fish the old-fashioned way at Kilnsey, from lake to plate. Visit the fish farm to see how we grow our renowned rainbow trout before hand processing and filleting them so you can enjoy the freshest fish possible.

_MG_4330You can eat our fish in our café or take it home from the Estate Shop. Kilnsey trout is supplied to leading restaurants and pubs across Yorkshire.

Did you know? Farmed fish is one of the most sustainable sources of protein. It takes 1kg of food to produce 1kg of rainbow trout, whereas chicken requires 3kg of food and beef needs 6kg. So eating trout is good for the planet.

Health benefits of our fish

The qualities contained in fish can do much to protect us against serious illness which is why health experts recommend that we eat one or two portions of fish per week. Oil rich fish such as rainbow trout are high in Omega 3 polyunsaturated fatty acids. Research has shown that these acids can lower blood fat levels and reduce blood clotting, thus cutting the risk of fatal heart attacks.

Rainbow trout is low in fat, high in health-giving oils and an excellent source of vitamins and minerals

There is also growing evidence of the importance of Omega 3 in the development of children’s brains and retinas. It is therefore particularly important that young children, pregnant and breastfeeding women eat regular portions of fish. Oil rich supplements have also been found to help the symptoms of rheumatoid arthritis, such as swollen and tender joints, grip strength and mobility.

Rainbow trout is also low in fat and calories! It contains one third the fat of salmon and contains just 135 calories per 100g. It is also an excellent source of iron, calcium, selenium and vitamins A, B1, B2, B6 and B12. Its natural oils help to keep skin and hair in good condition.
